Healthy Muffin Makeover at Brasstown Community Food Pantry!

Last week, our Family & Consumer Science Agent, Kim Terrell, visited the Brasstown Community Food Pantry to share a delicious and healthy twist on a pantry staple — pancake mix!

Participants were invited to taste test Blueberry Muffins made from pancake mix, eggs, Greek yogurt, a touch of maple syrup, and fresh blueberries. The verdict? Everyone loved them!

Many were surprised at how versatile pancake mix can be — muffins weren’t even on their radar! Kim shared how simple add-ins like Greek yogurt and eggs can boost the protein, while using maple syrup and fruit keeps things naturally sweet without refined sugar.

Looking for something savory? Try mixing in shredded cheese and turkey sausage instead of fruit!

Make ahead, refrigerate or freeze, then reheat in the microwave for a quick and healthy breakfast on the go!
