Kim Terrell, Clay County FCS agent, recently provided hands-on food preservation classes at the Brasstown Community Center. Brasstown's own, Carolyn Anderson, assisted Terrell with the classes. The classes consisted of safe food preservation instruction for pressure canning, water bath canning as well as a class on preserves and soft spreads. Preserved foods included green beans, tomatoes, grape jelly, and apple butter. Carolyn even surprised participants in the preserves and soft spreads class with a demonstration on making biscuits from scratch. Everyone got to enjoy a piping hot biscuit with some fresh apple butter and Carolyn's red raspberry jelly.
